But in some cases, they can be deadly. If you are trying fish or shellfish for the first time, proceed with caution.

Responsible seafood vendors should refuse fish that come from currents that carry toxic bloom. They should also test for CIDs like histamine, cadaverine, and putrescine. These enzymes indicate dangerous levels of decomposition, which can cause scombroid poisoning

Further, you should keep your eyes and nose open at the fish market. Look for visual evidence of rot or decomposition. Smell fish before you buy it, and don't buy anything with an unpleasant odor. The smell of decay may indicate the presence of toxins.

Finally, some fish, such as puffer fish, are naturally toxic. Only experienced cooks should prepare puffer fish.
